things I actually eat when I can't be bothered cooking

Right so it's been a mad week at school and by 7pm I genuinely have nothing left in me. I'm not making a proper meal, I'm just not. What I've basically landed on for busy evenings: - rice cakes with hummus and whatever's left in the fridge — cucumber, a bit of feta, sometimes just a sad handful of cherry tomatoes - boiled eggs I do in a batch on Sunday (this changed everything honestly) - oat cakes with nut butter — the GF ones obviously, I use Nairn's - a small bowl of edamame from frozen, just nuked in the microwave with a bit of sea salt None of this is groundbreaking. But when you've got coeliac and you're tired and you just want something that won't make you feel terrible, having these things ready to grab is everything. I used to just eat crisps and feel rubbish about it. The boiled eggs thing though — proper lovely, you can eat them cold, throw them in a bowl with literally anything. That's proper lovely and I'm not apologising for how basic it is.

rice cakes with hummus and feta is genuinely a solid combo, I eat this way more than I'd admit

same, I blend hummus into a dip with a bit of lemon and olive oil and just drink it dreckly after a surf — no shame in it

the batch boiled eggs thing is genuinely a game changer, I do the same with roasted chickpeas on a Sunday so there's always something to grab
