roasted veg and lentil thing — embarrassingly easy

Been making this basically every other day and I keep forgetting to post it because honestly it doesn't feel like a recipe, it's more just... chucking things in the oven. So: whatever veg you've got that needs using. This week it was courgette, red onion, and a load of cherry tomatoes going a bit soft. Halve them, toss with olive oil and a generous amount of cumin — more than you think — 200°C for about 25 minutes. Meanwhile rinse a tin of green lentils and leave them in a colander. That's it. That's the prep. When the veg comes out, mix it all together while it's still warm. The tomatoes kind of collapse and make their own dressing situation which is deeply satisfying. I usually add a squeeze of lemon and some fresh parsley if I've got it, crumbled feta if I'm feeling it. To be fair the feta makes it considerably better but it works without. Fills me up properly for hours. I eat mine at like 1pm as my first meal and it actually holds. No idea why lentils don't get more attention, they're dead cheap and they do the job.

I do something similar but throw in whatever wilting herbs are at the bottom of the fridge — mint and parsley on top at the end makes it feel more like an actual salad somehow. Works well if you've got a lemon going dry too.

roasted tomatoes especially — lycopene goes up when you cook them, good for skin. proper underrated

already left a comment but also — the soft cherry tomatoes thing is exactly why I never throw them out, they roast so much better when they're a bit gone over
