roasted aubergine and chickpea tray thing

Right so this came together on Tuesday because I had an aubergine that was one day away from being binned and honestly it turned out better than most things I actually plan. Cut the aubergine into chunks, tin of chickpeas drained, half a red onion, olive oil, cumin, smoked paprika, bit of salt. Everything on one tray, 200 degrees, about 30-35 minutes. That's basically it. Alfie ate it because it looked "crunchy" and Isla because I told her the chickpeas were tiny wee rocks. Spoiler: the kids didn't notice there was no meat. Kirsty had hers with flatbread and some yoghurt on top which looked well fancy — mine was just in a bowl standing at the counter because that's the reality of a Tuesday night with a six-year-old asking me to explain how volcanoes work at the same time. To be fair though it reheats dead well the next day, probably better actually. The aubergine goes all soft and everything absorbs the spices properly. 1 aubergine, cubed / 1 tin chickpeas, drained / ½ red onion, roughly chopped / 2 tbsp olive oil / 1 tsp cumin, 1 tsp smoked paprika / Salt, done Difficulty level: desperate dad with one eye on the kids and the other on the oven.

chickpeas are genuinely decent for skin, zinc and protein — I'm not a dermatologist but I notice a difference when I eat them regularly
