one pan salmon thing — honestly cannae believe how easy this was
Right so Kirsty was out last night and I had both bairns, a fridge with not much in it, and absolutely zero desire to stand over a hob for forty minutes. So I basically just… chucked everything on a tray.
Salmon fillets, a load of cherry tomatoes, some courgette and red onion sliced up rough, olive oil, salt, a squeeze of lemon. That's it. 200 degrees, about 22 minutes. Alfie asked if the tomatoes were lava. I said aye. He ate four of them.
To be fair I was fully prepared for Isla to refuse the salmon on sight because she's going through a beige food only phase right now but she just — ate it. Didn't say a word. I was almost suspicious. I think it helped that I called it "fish with treasure" because of the tomatoes, which I'm not proud of but you do what you have to do.
What I used (roughly — I don't really measure):
- 2 salmon fillets
- Handful cherry tomatoes
- 1 courgette, sliced
- Half a red onion, chunked up
- Olive oil drizzled over
- Salt, pepper, squeeze of lemon
- Optional: couple of garlic cloves thrown in whole
One tray. One oven. Minimal washing up. Difficulty level: genuinely anyone.
