nectarine and feta situation
Been going through a bit of a phase where I throw stone fruit into things that probably shouldn't have stone fruit in them. This one actually worked though.
Basically: sliced nectarines, cucumber cut into half moons, a handful of rocket, crumbled feta, and some toasted pine nuts if you can be bothered. Dressing is just olive oil, a tiny bit of red wine vinegar, and a pinch of chilli flakes. That's it. The nectarines are doing a lot of heavy lifting here — when they're properly ripe they're almost sweet enough that the feta and the chilli feel genuinely necessary rather than just seasoning. I had it for lunch twice this week which is fairly unusual for me, I don't tend to repeat things that quickly.
Mind you I didn't time it especially well on Tuesday and was eating it right as a work call started so I was just sort of vibing with a fork in one hand for 40 minutes, which is not the experience I'd recommend but still, held up fine.
