courgette fritters with whatever herbs you've got

Had two courgettes that were going a bit soft and honestly I nearly just chucked them in the caddy but thought I'd give this a go first. Basically grate the courgettes, squeeze out as much water as you can (loads comes out, don't skip this bit), then mix with an egg, a couple of spoonfuls of plain flour, salt, and whatever fresh herbs are hanging around — I used parsley and a bit of mint which sounds odd but works. Fry in a little oil for like 3-4 mins each side til they go properly golden. That's it. I had them with some yoghurt and a squeeze of lemon for lunch and they were dead good, way better than I expected for something I basically threw together to avoid food waste. The texture's almost like a little potato cake? Mind you courgette has way less going on flavour-wise so the herbs do matter. Don't skip the squeezing step or they go soggy and sad.

do you add anything for extra protein or just the one egg?

Sam's cottage cheese tip is actually solid — I've done similar with Greek yoghurt mixed in, bumps the protein up a fair bit

I sometimes throw in a spoonful of cottage cheese when the mix feels too loose — keeps them together and adds a bit of protein without changing the taste much
