courgette fritters — dead easy, dead quick
Right so Kirsty bought a load of courgettes at the market and they were just sitting there looking at me. Grated two of them, squeezed the water out with a tea towel (this bit is oddly satisfying), mixed in an egg, a bit of flour, salt, some frozen sweetcorn I found at the back of the freezer. Fried them in a dry pan, maybe 3 minutes each side.
Alfie called them "wee green burgers" and ate four. Isla ate two and then tried to feed one to her stuffed elephant so I'm counting that as a partial win.
Basically: courgette + egg + flour + whatever's kicking about. Difficulty level: forgot to defrost anything.
